greek salad


1 head of romaine lettuce, rinsed and drained and torn into small pieces
1/4 cup thinly sliced sweet onion
1/4 cup sliced Greek olives
1/2 red pepper sliced thin
2 tomatoes, seeded and chopped
1/2 cup peeled and thinly sliced cucumber
1 cup water packed feta cheese, crumbled
6 Tb olive oil
2 tsp dried oregano
1 lemon juiced
a splash of red wine vinegar
salt and pepper to taste

In a large salad bowl, combine the romaine lettuce, onion, olives, bell peppers, tomatoes, cucumber and feta.

Whisk together the olive oil, oregano, lemon juice, vinegar and salt and pepper. Pour dressing over the salad; toss and serve. Serves 6.
